sugar cane and from sugar beet, but also appears in honey,
sorghum, sugar maple and in some other sources.
It is one of main ingredients
in food industry.
Eventually sugar became
sufficiently cheap and common to influence standard cuisine.

Production
Table sugar comes from plant
sources. Two important sugar crops are sugarcane and sugar
beets. Some minor commercial sugar crops include the date
palm, sorghum and the sugar maple. In the financial year
2001/2002, worldwide production of sugar amounted to 134.1
million tones.
Cane sugar mostly comes from
countries such as Brazil, India, China, Thailand, Mexico and
Australia. They are major sugar-producing countries in the
world.
Beet sugar comes from
Northwest Europe, Eastern Europe, Northern Japan and USA.
The Europe is the the world's
second sugar exporter.
The United States supports
its sugar producers by setting relatively high sugar prices.
Sugar is one of the most
traded commodities in the world, which accounts for around
2% of the global commodity market.
Many countries subsidize
domestic sugar production and maintain high import tariffs.
Sugar prices in some
countries have been exceeded prices on the international
market by up to several times.
Sugar futures prices are
traditionally strong.
